Chicago Tribune: From Africa to the Americas



From Africa to the America’s is my exploration of the culinary connections between the foods of West Africa, the American South, the Caribbean nations, the Bahia region of Brazil, and East Africa is also included because of its influence today. There are 7 Chicago restaurants featured, and I interviewed the chefs and owners, who shared personal culinary memories and insights on dishes, ingredients and cooking techniques.
